2 cups shredded rotisserie chicken
1/2 wombok cabbage, finely sliced
4-5 spring onions, finely sliced
1 large carrot, grated
1 red capsicum, diced
1/2 cup fresh mint, chopped
1/2 cup coriander, chopped
1/2 cup chopped peanuts (optional, to serve)
Dressing
3 tbsp lime juice
1 clove garlic, crushed
2 tbsp sweet chilli sauce
2 tbsp fish sauce
1 tbsp sugar
2 tbsp vegetable oil
1 red chilli, de-seeded and sliced (optional)
Combine all the salad ingredients, apart from the peanuts, in a large bowl.
Drizzle with the dressing and toss, then top with the chopped peanuts to serve.
