Ingredients
- 125g butter, melted
- 125g desiccated coconut
- 125g caster sugar
- 200g self-raising flour
- 2 tsp vanilla essence
- 1 tin apples (400g)
- 200g sour cream
- 1 tsp cinnamon
- 1 tsp caster sugar
Method
- Preheat oven to 180°C and line a 20cm square cake tin with baking paper - leave a little overhang to help lift the slice from the tin once baked.
- Pour the melted butter into a large bowl and add the coconut, sugar, flour and vanilla.
- Beat the mixture until thoroughly combined, then press the mixture evenly into the prepared tin.
- Bake for 15 minutes, until lightly browned.
- Remove the slice base from the oven and cover it evenly with the apple, then spread the sour cream all over the top.
- Combine the sugar and cinnamon and sprinkle it all over the sour cream.
- Return to the oven and bake for another 20 minutes, until the sour cream has set.
- Refrigerate until completely cold before slicing into squares.
